Vegan Orange Cookies

At my last yoga class, I was a bit embarrassed because I was wearing a pair of big red fluffy snowman socks. I love them, but I also associate them with Christmas. One of the lovely yogis in my class reassured me that snowman socks are totally appropriate "until the first daffodils start to come up". Although we are getting close to that here in Seattle, I am extending this saying to include Orange Cookies, which I also associate with Christmas.

Here is a Vegan Orange Cookie Recipe. I've made these so many times I'm not positive about the measurements. I found this recipe on Vegan Campus and modified it a bit. Their version includes cranberries, and a glaze, mine is lower in sugar and includes cinnamon and vanilla. yum.

  • 2 1/4 Cups Flour
  • 3/4 (or to taste) Cup Natural Sweetener
  • 1 Cup melted non-dairy, non-hydrogenated margarine such as Earth Balance
  • 1 Flax Egg Replacer (about 1 tablespoon Flaxmeal)
  • 1/2 Tsp baking powder
  • 1 Tsp. Orange Zest
  • 2 Tbs. Orange Juice
  • 1 Tsp. Vanilla
  • 1 Tsp. ground Cinnamon

Add more liquid or flour if mix is too dry/wet & taste for sweetness. Bake at 350 degrees for 10-15 minutes on a lightly greased or non stick baking sheet. Enjoy with tea or rice milk :)
